Mom was working, so dad taught ANNIE how to cook the dinner. From there her training progressed until cooking at home became something special something to which ANNIE gave heart and soul. I was taught to cook in the manner of the old world. That is, by using fresh ingredients when possible and from scratch. We didnt know the meaning of the word box or canned in our household it was always fresh.
ANNIE is now and has been for the past 11 years the head chef for LENNY COHEN. When she began cooking for LENNYp he had inherited her from the deli in which she was employed and which he purchased. That was in Recently, LENNY became partners with ED HARRINGTON and ANNIE is now doing the chefing honors for the popular HARRINGTONS on VAN HOUTEN AVENUE in CLIFTON. My specialty is homemade soups. I love to make them.
While I dont do what might be called fancy cooking here at HARRINGTONS, I do prepare everything to order in what I call the good old-fashioned way. I do cook gourmet home for my husband JOSEPH and my children, daughter JOANNA and son EDWARD. I just dont think that pheasant or venison would suit here, but want you to know I can and do gourmet cooking whenever I get the urge. Even with gourmet foods, though, my heart is with simple, tasty dishes. I once was asked how could an ITALIAN girl such as I cook all the foods like MATZOH BALLS, POTATO LATKES, NOODLE PUDDING and the other foods so popular in delis.
It was easy. I think once you know how to prepare foods, its simply a matter of changing ingredients for whatever you are cooking. I also think you must love your work. One of my greatest pleasures is having people eating my cpoking and raving about my food. I love the feeling.
Another thing I like to do is create dishes. Since Im a soup lover, I come up with my own ingredients for making all kinds of At the same time, I use my own recipes for whatever I cook here including the MEAT LOAF, MEAT BALLS, ZITI, BRISKET, CORNED BEEF and the specials served here daily. Fact is, Im pleased to be the top chef in the kitchen. Ive been teaching PERCY WILLIAMS, who helps me in the kitchen, my recipes. Cook until soft Brown onions in butter, add to soup with chicken base, thyme, garlic, and pepper and cook for about 20 minutes.
Mix flour with heavy cream, pour into soup until thickened.
