    If I were to open a restaurant in LV, it would be a cozy, intimate, luxurious, comfortable speakeasy-esque place that serves drinks and hearty, creative charcuterie + desserts (a la Bar Leather Apron in Honolulu)—but here’s the kicker: each guest can visit no more than twice a month, no large group reservations, and they have to be with a Las Vegas local. 😉The Why: As a tourist hotspot, LV’s restaurants cater to volume traffic. No matter the decor or location, every restaurant feels—because of the size of the space, number of tables, and bustle of staff traffic—like a cafeteria. I believe people want truly different experiences, and in busy Vegas, that would be unhurried comfort, peace, and luxurious connection. It would be a haven—a blissful escape; like Charon welcoming guests to The Continental.Why only 2x a month? Supply and demand. Exclusivity. Playing the line between “Absence makes the heart grow fonder,” and “Familiarity breeds contempt.”Why with a LV local? 1) Again, supply (access) and demand. 2) The room won’t ever carry an overt tourist vibe. And 3) I love creating opportunities and incentives to help people connect, and Las Vegas is home to some wonderful people.

    Over the last year, I've lived in Toronto, then in France, then back in Toronto, then back to France for a hot minute. I'm an observant gal - notice things that are awesome, perhaps a bit peculiar when you compare/contrast European and North American standards. This is a new series documenting my 'Observations from Abroad'. Futures-folk might view this as (quite weak) weak signals of change. Observations from Abroad: Dual DiningTwo separately owned and operated restaurants share one public square as their patio space. One restaurant is fancy, the other is more casual. Sometimes it's just one restaurant that has the whole patio, sometimes it's just the other, and sometimes it's split 50/50. During the day - poof - no tables - just locals enjoying the water fountain. Sounds like organized chaos - and I am sure it is - but it works.This is a prime example of 'Sharing is Caring', and an effective & innovative use of public space. So casually going against the grain of our obsession with ownership. Further, it’s a testament to being human-centred. Yes, these restauranteurs are in the business of feeding people, but they are also in the business of PEOPLE, period. These guys know their customers. They understand that visitors and locals alike want, nay, NEED diverse dining options. End of the day, people love to have a choice. This simple act of sharing economically benefits both businesses as well as the town, and upholds positive community values such as sharing, communication, and mutual respect.
